You buy a fresh truffle with your nose and your hands, not just from a photo. Here is what to know before your first order.
Which truffles, and when
- White truffle (Tuber magnatum Pico): the most aromatic and sought-after truffle. Season: late September to December.
- Black winter truffle (Tuber melanosporum): deep aroma of forest floor and cocoa. Season: December to March.
- Summer truffle (Tuber aestivum): milder, ideal for everyday cooking. Season: May to August.
- Autumn / Burgundy truffle (Tuber uncinatum): similar to the summer truffle but more intense. Season: September to December.
- Bianchetto (Tuber borchii): a white spring truffle with a strong, slightly garlicky scent. Season: January to April.
How to recognise a good truffle
- Aroma: intense and clean, never of ammonia or mould.
- Firmness: a fresh truffle is firm. If it gives under your finger, it is past its best.
- Skin: no large holes, soft or damp patches. A little soil is normal and even a good sign.
- Weight: a fresh truffle feels heavy for its size. A light one has dried out.
How much to buy
For one serving of pasta or risotto, 8–10 g of white or 10–15 g of black truffle is enough. Buy only what you will use within a few days, because fresh truffle loses its aroma quickly. More on the varieties in our truffle guide.
What to ask before ordering
- Which variety is it and when was it harvested?
- How is it packed and how long does delivery take?
- Is it shipped chilled?
Our fresh truffles are packed and shipped chilled. On the fresh truffles page you can see real photos of what we deliver.
