Fresh wild mushrooms
Fresh wild mushrooms
Wild porcini and chanterelles, fresh and by the kilo, plus dried porcini all year. Price on request.
Chanterelles and porcini are true forest mushrooms: they grow wild and can only be picked when the weather allows. Ours are wild-picked in the forests of Romania and sold fresh – loose, in wooden crates – or dried, for private customers as well as for restaurants and delicatessens. Because supply depends on the forest and the weather, we quote price and availability on request.
Our two mushrooms
| Mushroom | Latin name | Season (approx.) | Aroma and texture | Best for |
|---|---|---|---|---|
| Golden chanterelle | Cantharellus cibarius | June – October | fruity, slightly peppery; firm, slightly springy flesh | sautéed in butter, with eggs, in pasta, risotto and sauces for meat |
| Porcini (cep) | Boletus edulis | late May/June – October/November | rich, nutty, of the forest; firm white flesh | risotto, pasta, pan-fried or grilled, sauces, soups |
Seasons are a guide only. Wild mushrooms appear after rain and at the right temperatures, so the actual season shifts from year to year and even from week to week. Write to us and we will tell you what is available right now.
Dried porcini
Dried porcini are available all year, as whole slices or crumbled, by the kilo. They suit risotto, sauces and soups: soak them for 20–30 minutes in lukewarm water, and the soaking water adds flavour to the dish too.
How we select them
- Firm: only mushrooms with firm flesh that does not give under the finger.
- Dry: mushrooms without excess moisture, which keep better and hold their aroma.
- Sorted by hand: we sort every mushroom by hand, one by one, before it goes into the crate.
How we deliver
Fresh mushrooms travel chilled in wooden crates and are sent on their way as soon as possible after picking. We deliver within Romania and to the EU, subject to availability. Wild mushrooms are delicate: they are best cooked within 2 to 3 days.
How to store them
- Keep them in the fridge at 2–4 °C.
- Store them in a paper bag or in the ventilated crate they arrived in – never in plastic, where they soften quickly.
- Use them within 2–3 days.
- Clean them with a brush just before cooking and do not wash them in water: they soak it up and lose their firmness.
For private customers
