A fresh truffle is alive: it breathes and loses water and aroma every day. A few simple steps keep it at its best until you use it.
How long does a fresh truffle keep?
- White truffle: 5–7 days.
- Black truffle: 7–10 days.
Ideally use it in the first few days, when the aroma is strongest.
How to store it
- Do not wash it until the day you use it.
- Wrap it in kitchen paper and place it in a glass jar with a lid.
- Keep the jar in the fridge at 2–4 °C, on the least cold shelf.
- Change the paper every day, as it absorbs moisture.
Not in rice: rice does take on the aroma, but it dries the truffle out. A better trick: put a few raw eggs, in their shells, in the same jar. After a day or two they smell of truffle, and your scrambled eggs will be outstanding.
How to clean it
Just before use, brush the truffle with a soft brush under a thin stream of cold water, then dry it straight away with paper.
How to slice and dose it
- Use a truffle slicer or a mandoline for the thinnest possible slices.
- Per serving: 8–10 g of white or 10–15 g of black truffle.
- Add white truffle raw, at the end. Black truffle can be gently warmed in butter or cream.
- Fat carries the aroma: butter, eggs, cheese, cream.
When the season ends, the aroma lives on in the jar: white truffle butter or summer truffle carpaccio.
