Small black pearls that burst gently at the first bite and release, for a moment, a clean taste of truffle.

What it is: pearls made from the juice of black winter truffle (Tuber melanosporum) and summer truffle (Tuber aestivum), coloured with cuttlefish ink and set with sodium alginate, locust bean gum and tapioca, then seasoned with salt and flavouring. They look like caviar but contain no fish roe.

Origin: Made by a family producer in Spello, Umbria.

  • Aroma: dark truffle, woodland
  • Taste: lightly salty, gently earthy
  • Texture: a delicate skin that pops in the mouth

At a glance: net weight 130 g · truffle juice from Tuber melanosporum and Tuber aestivum · contains molluscs (cuttlefish ink) · keeps 7 days chilled once opened · made in Spello, Umbria.

An elegant finishing touch for aperitifs and festive plates, ready in seconds.

How to use

Use cold only, and spoon onto the food just before serving so the pearls keep their shape. Around half a teaspoon per canapé is enough.

  • Blinis or potato rösti with crème fraîche
  • Beef tartare or seared scallops
  • Quail eggs or burrata

Wine suggestion: a Franciacorta Brut or a dry Champagne.
